Knox College Commencement Lunch
A picnic lunch for graduates and their families will be held immediately following the 2017 Knox College Commencement ceremony on the South Lawn of Seymour Union (rain location: Hard Knox Cafe).
Purchase your lunch now. To avoid duplicate orders, please check the attendance list to make sure your parent or graduate has not already done so.
Choice of wrap sandwich:
Chicken Caesar salad (spinach wrap with diced tomato, romaine lettuce, parmesan cheese, grilled chicken, Caesar dressing)
Asian tofu (tomato wrap with fried tofu, bok choy, carrot, noodles, red pepper, green onion, edamame sesame dressing)
Roasted beef and horseradish (roasted local beef with avocado, red pepper jam, watercress, lemon dressing, horseradish sour cream sauce)
Gluten-free Asian chicken salad on a bed of lettuce (chicken, bok choy, carrot, noodles, red pepper, green onion, edamame sesame dressing)
Sides include:
Pasta salad with cherry tomato, fresh mozzarella, black olives, fresh basil, bell peppers, sundried tomato dressing
Quinoa salad with black beans, grilled asparagus, red peppers, red onion, tomato, cucumber, cilantro, chipotle lime dressing
Fruit salad
Cilantro lime house-made chips
Dessert includes: lemon bars, vegan cookies, GF brownies
